Golden Peony Tea Tasting Guide

1. Introduction to Golden Peony

Golden Peony (Jin Mudan) is a premium Chinese tea variety, bred by the Fujian Tea Research Institute through crossbreeding Tieguanyin (mother plant) and Huangdan (father plant). Belonging to the oolong tea family, it is named for its golden buds (Jinhao) and intense floral aroma. The dry leaves exhibit a dark green and golden hue, while the brewed tea yields a golden-orange liquor with a captivating fragrance that blends the orchid notes of Tieguanyin and the fruity richness of Wuyi rock tea.

2. Quality Characteristics

1.      Dry Leaves: Tightly rolled, well-shaped, with a mix of dark green and golden tips. Aromas of sweet florals.

2.      Aroma:

l   First Impression: Orchid, gardenia, and fresh floral notes.

l   After Infusion: Ripe fruitiness (peach, longan) with a subtle creamy finish.

3.      Liquor Color: Bright golden-yellow, turning deeper orange with longer steeping.

4.      Taste: Smooth, mellow, and slightly mineral ("rock bone" texture), with a lingering sweet aftertaste.

5.      Wet Leaves: Thick, tender leaves with a "green leaf, red edge" oxidation pattern.

3. Tasting Steps

1.      Preheat & Dry Aroma:

l   Warm the teapot/gaiwan, add 5g of tea, shake gently, and inhale the initial fragrance.

2.      Brewing Method:

l   Use 100°C water, first infusion for 5 seconds, increasing by 5 sec per steeping (lasts 8-10 infusions).

3.      Tasting Focus:

l   1st-2nd Infusion: Floral burst and freshness.

l   3rd-5th Infusion: Balanced fruitiness and body; note the throat sensation ("hou yun").

l   6th+ Infusion: Sweet, delicate finish; cold sniff the leaves for residual aroma.

4. Selection & Storage

l  High-Quality Signs: Visible golden tips, pure floral scent (no artificial additives), clear liquor.

l  Avoid: Harsh artificial fragrance or brittle leaves (over-roasted).

l  Storage: Airtight, away from light and odors; refrigeration preserves freshness.

5. Pairing Suggestions

l  Food: Light pastries (e.g., mung bean cake), unsalted nuts.

l  Occasion: Afternoon tea for focus, or paired with soft music for social gatherings.
